Italian Style Poached Eggs

"When I was growing up, we often had Eggs for dinner. I loved actually having breakfast for dinner. It was a favorite for me. Usually on a Sunday night. We would have a huge dinner during the lunch time hours, so by 6 or 7 we needed something lighter. Poached eggs Italian style was mom's go to dinner. I think I could have eaten a whole loaf of bread with those eggs they were so good!"
