Bell Pepper Quiche
The great thing about making quiche recipes is that the flavor combinations are endless. The filling can be made up of different cheeses, meats and veggies. Try this wonderful Bell Pepper Quiche for a unique flavor that you're going to adore.

Ingredients
- 2 large bell peppers, any color
- 3 medium size eggs
- 1/2 cup heavy cream
- 1/2 cup shredded cheese: Cheddar, Jack or Swiss
- 1/2 cup to 1 cup of diced veggies: onions, mushrooms, spinach, whatever you'd like
- 1/2 cup bacon or ham (optional)
- salt and pepper to taste
- 1/4 cup bread crumbs
- 2 teaspoons melted butter
Instructions

Preheat oven to 375 degrees F

In a small bowl combine the eggs, cream, salt and pepper. Set aside.

Prepare your vegetables, grate your cheese and dice your meat.

In a glass pie plate, lay your bell pepper halves next to each other. Layer the insides with cheese, vegetables and meat until 3/4 of the way full. Depending on size of bell pepper some may hold more or less than others.

Slowly pour the egg mixture into the bell pepper. They should be full.

Combine the bread crumbs and butter. Sprinkle on the top of each pepper.

Cook for 20-25 minutes. The centers should not wiggle when shook.

This is an amazing idea. If you are looking to cut your carbs, this is a tasty way to do it. I don't think it really needs the bread crumbs on top. I didn't use them and it was still yummy. Just pull whatever you have from your fridge or garden and whip this up.
