Aquavit Sorbet

Aquavit Sorbet is a citrus-y, oh so good frozen dessert that pairs nicely with macaroons for a sweet summertime treat.

Ingredients

  • 2 cups water
  • 1 cup sugar
  • zest of 1 lemon
  • juice of 2 lemons
  • 3/4 cup Aquavit
  • 1 egg white
  • almond slivers, for garnish

Instructions

  1. Scrub the lemon well, and remove the thin outer zest with a potato peeler or sharp knife.
     
  2. Boil water, sugar and lemon rind for 5 to 10 minutes.
     
  3. Add lemon juice and strain the mixture.
     
  4. Cool the sugar syrup and season to taste with Aquavit. Freeze lightly.
     
  5. Beat egg white lightly and stir it into the partially frozen sorbet. Freeze completely.
     
  6. Stir the sorbet well before serving. Sprinkle with toasted almond slivers and serve macaroon bars on the side.
