Summer's Best Mini Strawberry Pies

Summer's Best Mini Strawberry Pies might just be one of the best things about this time of the year. Ingredients

  • 3 tablespoons cornstarch
  • 1 cup sugar
  • 1 tablespoon lemon juice
  • 1 cup water
  • 3 cups fresh strawberries, sliced
  • 1 Store-bought pie crust

Instructions

  1. Line three mini pie pans with pie crust. Poke with fork and bake at 425 degrees F for 5 minutes. Remove from oven and set aside.

  2. In a small saucepan over medium heat combine cornstarch, sugar, lemon juice, and water. 

  3. Bring to a boil and simmer until thickened. Add in the sliced strawberries, and stir and let thicken for another 5 minutes. 

  4. Pour in to the pie shell. Top with more pie crust, cut into with a knife to make a star shape. Brush with butter and sprinkle with sugar.

  5. Bake for 10-15 minutes or until golden brown. 

  6. Serve with vanilla ice cream and fresh strawberries.

Omg, yum! Either I need to hang out in bakeries more often or baking strawberry pies is something new. I've seen strawberry cheesecakes and strawberry pies made with Jello but never a baked strawberry pie. I can't help but think the strawberries would get mushy...don't they? Well, being that I'm a huge fan of strawberries this is definitely something I need to try!

I've always liked the mini pies I've purchased that are commercially produced by some small bakeries and I'm looking forward to trying my hand at making them myself. Thanks to Maggie G for the additional suggestions below. I think the idea of the pureed mango is splendid and I'd love to give this a go. Maybe do a combination of the strawberry and mango? That would be an interesting combination to try.

Mayonnaise in a cake? Oh my goodness!! It certainly does look absolutely delicious though and am glad for the picture. I have to try this because it's so different and I can't wait to tell my friends that the cake is made with mayonnaise. This buttercream frosting looks totally awesome.

With summer soon approaching, this is a great dessert for any occasion Memorial Day, 4th of July, or any barbecue/beach day! Plus, they only have a few ingredients and use fresh, in-season fruit! I recommend using some other berries to make each pie unique or even combining a bunch of berries in one pie. Other fruit suggestions are pears, peaches, or even pureed mango!

These hand pies are precious. I will definitely be making these for the fourth of July!
