Kiwi and Raspberry Chia Pudding
"Kiwi and Raspberry Chia Pudding is naturally sweet and creamy. Make it ahead and keep it in the fridge for a quick and healthy snack anytime. The pink and green layers are basically thick smoothies and the bottom layer is just chia seeds and coconut milk. Chia seeds are nutrient powerhouses. They are full of omega 3 fatty acids, protein and calcium. Plus they fill you up! You’ll be shocked by how filling this Kiwi and Raspberry Chia pudding is."
Serves2 People
Ingredients
- 1 cup chia seeds
- 1 cup coconut milk
- 1 cup frozen raspberries
- 1 cup coconut milk
- 2 banana
- 1 cup spinach
- 2 kiwis
- 3 pieces of ice (or more)
- 2 tablespoons coconut milk
-
First, stir together the chia seeds and 1½ cups milk.
-
Place in fridge for at least two hours to set. When set proceed with recipe.
-
Place the chia pudding layer in the bottom of two glasses.
-
For pink layer, mix all ingredients in a high-powered blender. You want the mixture to be thick so the colors don't run together when you layer them in your glass.
-
Gently pour the pink layer over top of chia layer.
-
For green layer, mix all ingredients in a high-powered blender.
