Summer Blueberry Watermelon Salad
"You cannot celebrate summer without cold watermelon. I am going to show you how to make an easy watermelon salad to enjoy on a hot summer day. You can whip up this Watermelon Salad in minutes with watermelon, blueberry, sugar, water, a lemon, and a pinch of salt. Begin by making a simple sugar using 1/4 cup sugar with 1/4 cup water. Heat it in a saucepan on the stove. Stir until the sugar has dissolved."

Ingredients
- 1 cup sugar
- 1 cup water
- 3 cups cold watermelon, balls
- 2 cups Blueberries
- 1 Lemon
- 1 teaspoon salt
- 8 mint leaves

Simmer sugar and water for a couple of minutes on the stove until completely dissolved.

The sugar will turn clear when dissolved. It only takes a couple of minutes.

Allow this simple sugar mixture to completely cool.

Add 2 cups Blueberries to a large bowl.

Use a melon baller and make 3 cups watermelon balls.

Add juice and zest of one lemon.

I love the tartness of the blueberries and lemon with the sweetness of the syrup and watermelon, and the longer you chill it, the better it gets! The sugar in the syrup and the little bit of salt draw some of the juice out of the fruit to make its own fruity sauce. The colors are so pretty too.
