Traditionalists will say that the potatoes need to be grated by hand in order to get a traditional German potato pancake. However, I like to use a blender as well, since it goes so much quicker. Just be careful not to blend too finely. You do want some 'shreds' of potatoes if possible. As well, if you use butter to cook these in, the flavor will be amazing.
