Cheesy Garlic Fries in Foil Packets
Grilling in tin foil allows you to achieve a slight crispiness on the edges and a wonderful tenderness on the inside. The best part is when you open up the foil packets. Sprinkle a layer of cheese over the top of your potatoes and cover them pack up with the foil. Leave it closed for about a minute, and when you open it back up, the cheese will have melted flawlessly over the top of the potato wedges. This is the perfect grilling season side dish.

We've grilled potatoes in foil over the grill before, and this would be a wonderful side item for when we grill some hamburgers again. I've used this before to make regular french fries and they turned out quite well. I hadn't thought of adding the cheese and then doing a short broil. This has always been a grill recipe, not a grill/oven combo, but I really like the idea of adding the cheese then broiling to finish off. Usually, we've just added some Parmesan cheese after opening the foil.

This sounds like a great idea. I have never cooked potatoes in foil. What I like about these foil recipes is cutting down on the cleaning up. I'm really going to get into this. I think the cheese melting is a good idea. These sound absolutely scrumptious. I would sprinkle a bit of chili over too! Yum!
