    Mexican Grilled Corn on the Cob

    After trying Mexican Grilled Corn on the Cob, you may never go back to the plain butter and salt variety. In this summer side dish recipe, corn on the cob is grilled right on the grill to give it a nice grill flavor. Then, the corn is brushed with a mayonnaise and lime mixture and sprinkled with cheese and a variety of Mexican spices. This grilled corn is so full of flavor, it will be a hit wherever you serve it.

    This recipe is not quite as easy as the others to access, but I have made a variation on this grilled corn recipe before that the family absolutely adores, involving brushing the ears of corn with butter and grilling in tin-foil boats swimming in melted butter, garlic and whichever other spices or seasonings you want to add, and then grilling the corn ears. Would be very awesome with Mexican seasonings, though!
