Mummy Meatloaf

This mummy meatloaf is a great conversation starter! This Mummy Meatloaf is a super fun way to get kids to eat their dinner, perfect for Halloween! I’ve been making fun Halloween party food for quite a few years, this time I wanted to play off of a fun dinnertime meal I was inspired by years ago."

Ingredients
- 2 pounds lean ground beef
- 3 cups tomato juice
- 1 cup old fashioned oats
- 2 large eggs
- 1 cup finely diced onion
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 1/2 pounds yukon gold potatoes
- 1 cup butter
- 1 cup half and half
Instruction

Preheat oven to 350 degrees F.

Run the dry oats through a food processor to break them up.

In a large bowl, combine oats, ground beef, tomato juice, egg, onion, salt and pepper, and mix well with a fork. Press firmly into a 2.5 quart ungreased oven safe glass bowl.
