This looks so wholesome and tasty. Guinness is delicious in stew, but I've never thought of adding mushrooms. I love the fact that the gravy is thick. So many stews have a watery gravy that's very unappetizing, but when a stew recipe describes a rich gravy, then it's definitely worth a try.

This is such a simple and yet flavorful, rich and rustic stew. I love everything about this stew, from the tender, juicy pieces of beef, to the generously sized mushrooms, potatoes and onion. Add to all this, the finishing touch of delicious thick gravy, and you have a winner my friend. I admit I don't make it for St. Patrick's Day, but it is my go to stew recipe every other day.
