Boxty Irish Potato Cakes
Boxty is a fixture at any Irish breakfast table. This recipe serves 8, so whip up a batch of these delicious potato pancakes next time you entertain!
Ingredients
- 1/2 pound raw potato
- 1/2 pound mashed potato
- 1/2 pound plain flour
- milk, to taste
- 1 egg
- salt and pepper, to taste
Instructions
1. Grate raw potatoes and mix with the cooked mashed potatoes. Add salt, pepper and flour.
2. Beat egg and add to mixture with just enough milk to make a batter that will drop from a spoon. Drop by tablespoonfuls onto a hot griddle or frying pan. Cook over a moderate heat for 3-4 minutes on each side.

My family has served this recipe for years only we do not use mashed cooked potatoes just raw grated potatoes. We add choped raw union to the batter as well just as much as you like but ususally about 12 of a large onion. They are great for breakfast, lunch or an evening meal.

Yum!..Yum! I have always made these for Breakfast.. when I was raising my 5 kids (now grown) we would often have "UPSIDE DOWN DAY" where they were served, along with bacon or sausage eggs for Dinner!! I still make them for myself..or company!! Never have had any complaints!!
