Homemade Blackberry Waffles

Ingredients
- For the Waffles
- 2 cups all-purpose flour
- 1 pinch salt
- 2 tablespoons white sugar
- 1 teaspoon orange zest
- 4 teaspoons baking powder
- 2 eggs
- 1 1/2 cup milk, warmed
- 1/3 cup butter, melted
- 1 teaspoon vanilla extract
- For the Topping:
- 1 1/2 cup frozen or fresh blackberries
- 1 cup maple syrup preferable grade B
- 1/2 orange, juiced
- 1 teaspoon vanilla extract
- 1/2 cup plain yogurt

For the Topping:

Add to little saucepan blackberries, maple syrup, orange zest, orange juice and vanilla extract. On medium heat bring to boil, then lower the heat and let it thicken for about 10 minutes or until thick and glossy. Set aside.

For the Waffles:

Add eggs, milk, melted butter and vanilla extract. Mix all together until just blended and let it sit for 4-10 minutes or until bubbles formed on the batter.

Preheat waffle maker to high heat, butter it and add 1/4 -1/2 cup of batter (depends on the size of your waffle maker). Cook for 4 minutes or until waffles are golden brown. Then repeat the process with all the other batter.

Serve waffles with a little bit of yogurt, top with blackberries topping and enjoy!
