The muffin tin is truly a lifesaver sometimes. I just saw a recipe for zucchini bites using a muffin tin and now these awesome mac and cheese bites! I would even recommend using a mini muffin tin to double how many you get since you know your family and friends will keep coming back for more of these. To dress them up for adults, try adding some feta, blue cheese, or goat cheese.

How easy and how fun to change up traditional mac and cheese. I don't need to make my macaroni and cheese gluten free so can I substitute regular elbow mac? I think it's a fun idea to call this an appetizer. I would just serve it as a side dish, maybe with sloppy joes.
