Got to admit that I have never thought of combining butternut squash and macaroni cheese so we decided to try this somewhat nervously. It was surprisingly good and decided that it was the beautiful bacon flavor that enabled the butternut and pasta to combine so seamlessly. Next time we will add a bit more zhooosh to the flavors but there WILL be a next time because it is really good.

My son is a very picky eater, and I sometimes have to make him his own special food for dinner since he refuses to have what mom and dad is eating. One of the few things he does like is macaroni and cheese. I think this one will be a winner since it looks and tastes like macaroni and cheese, but sneaks in some extra veggies and protein! I can't wait to make this for my family this week!
