Gnocchi Marinara with Sausage & Peppers
"This dinner is so quick and easy it practically cooks itself. Here's how it quickly comes together...Cook some Italian chicken sausage with some thinly sliced onions. Add some peppers. Red, yellow, green. Eat the rainbow baby. While the sausage, onions, and peppers are doing their thing, cook the gnocchi. Only 4ish minutes for the lil dumplings. Then all you gotta do is add your prepared sauce to the pan with the sausage and peppers and let it warm up. Lastly, add the cooked gnocchi to the saucy mixture. Stir it up. Serve it up. And don't forget to top it off with fresh chopped basil, freshly grated parmesan, and some ground black pepper. Eat and go back for seconds."

I love to use Italian style chicken sausage for skillet dishes like this, since it is a lot healthier than pork sausage, and you aren't left with a ton of grease that you have to drain from the pan! This dish comes together so quickly, and with only one pan to wash! And great colorful mix of veggies.
