Paccheri Pasta With Summer Vegetables
"This refreshing Paccheri Pasta recipe will bring back memories of grandma's pasta. This dish combines the vibrant flavors of fresh vegetables and Cantadina Tomato Sauce to create a unique summer pasta flavor. With only 30 minutes of active prep time, this pasta dish is a simple and tasty way to use up your garden squash, zucchini and cherry tomatoes. Ingredients
- 1 (16-ounce) Paccheri Pasta
- 2 cans Contadina Tomato Sauce
- 1 can Contadina Tomato Paste
- 1 Yellow Croockneck Squash
- 1 Zucchini
- 1 Yellow Onion - medium
- 3 cloves Garlic
- 2 handfuls Cherry Tomatoes - Mix of red, yellow, and other cherry heirloom tomatoes.
- 3 sprigs Oregano
- Olive oil
- small dash of salt and pepper - to taste
Instructions

In a 1 quart pan, pour a few dashes of olive oil in the pan over medium heat.

Add in chopped yellow onion and minced garlic. Simmer until translucent.

Add in Contadina Tomato Sauce and Contadina Tomato Paste. Stir the ingredients gently.
