Shaker Lemon Pie
Ingredients
- 2 lemons
- 4 T cornstarch
- 1 1/4 C sugar
- 3 egg yolks, beaten
- 2 C boiling water
- 3 egg whites
- 1/8 t salt
- 2 T sugar
- 1/2 T lemon juice
- 1 baked pie shell
Instructions
Roll lemons thoroughly; grate off the yellow rind and keep. Squeeze out juice. Make a boiled custard of cornstarch, sugar, beaten egg yolks and water. Add rind and juice of lemons. Stir until smooth and turn into baked pie shell. Beat egg whites with salt; when stiff gradually add sugar and 1/2 T lemon juice. Top custard with meringue and bake in slow oven until well browned.
