This is quite reminiscent of some really good flatbreads I've had at some restaurants over the years. I love the blend of the various tastes of the toppings, and I know I could polish off an entire one of these all by myself. The color in the photos gave me the idea of adding some shredded cheddar cheese to the mozzarella. I also add the prosciutto with the mozzarella and cheddar cheese before baking. Next time, I might add a little bit of diced Roma tomatoes to the arugula and Parmesan.

I love it when I find a spin on an old favorite. There is no why that this will not be a recipe that gets used more than once at our house. With so few ingredients and so easy to prepare, the teens in the house can prepare dinner sometimes.

Arugula is not one of my favorite lettuce, but I do love puff pastry. Puff pastry is so light and airy and the name implies. Olive oil instead of the tomato-based sauce is also a spin on the typical pizza. This easy recipe may go into my menu rotation.

I think I would like a pizza made with puff pastry. I never thought to do it but it is an excellent idea to make a quick meal. I love arugula and prosciutto. It goes well together and it reminded of a very popular pizzeria where I used to live called Espresso. I always ordered this pizza. I'm definitely going to make myself one of these. It will be nice topped with some fresh avocado as well.
