I was impressed with this recipe, but noticed that you needed a cast iron pan. Would there be alternatives if someone doesnt have a cast iron pan handy? Could a cookie sheet or flatter cookware work? Also, because of the image, I mistakenly thought it was something you cooked on the stove...Even though it makes sense to use the oven, I was still surprised to find out that you needed to put the pan in the oven rather than cook on the top/range.
