"Cider braised ham with apples, chilies and garlic. This is truly the best way to cook a smoked ham joint (called gammon in Britain). Slow braising in the oven makes wonderfully tender but moist and juicy meat with great flavour from apples and chilies. A great idea for a festive roast, all you need is a large cast iron pan and a lot of cider! And the leftovers will make ham sandwiches to die for."
