Pork Tenderloin with Bourbon Sauce
Ingredients
- 1 package pork tenderoin, about 2 lbs
- salt and pepper
- 1 tbls olive oil
- 1/2 cup light brown sugar
- 1/3 cup bourbon, preferably Jack Daniels
- 1 tbls ketchup
- 1/2 cup water
- 1/2 cup dried cranberries or walnuts
- 1 tbls unsalted butter
Instructions
Trim the tenderloins of fat and silver skin, salt and pepper to taste. In a 12 inch oven proof saute pan, heat the oil and brown the tenderloins on all sides. Add the rest of the ingredients except for the butter and mix well coating the meat all over. Place in a 375F oven for 25-30 minutes or untill done. Remove from oven, set tenderloins on cutting board, cover to keep warm. Return the sauce pan to the stove top, whisk in butter and reduce to desired consistancy. If sauce becomes too thick add a little water. Slice pork, place on serving dish, pour sauce over and serve.
