Sunday Night Pork Roast

After a long work week, there is nothing better than enjoying a hearty homemade dinner that brings comfort to the home. Our Sunday Night Pork Roast is a delicious pork roast recipe that you'll want to make every chance you get. Baked in the oven, its flavors blend together to make a savory cut of meat that tastes as good as it looks. Make something special this weekend and start the week off with a succulent meal.

Ingredients

  • 3 pounds pork loin roast
  • 3 teaspoons minced garlic
  • Salt and freshly ground pepper, to taste
  • 2 teaspoons dried rosemary
  • 1 teaspoon dried thyme leaves
  • 1 cup diced onion
  • 2 medium carrots, diced
  • 1 celery stalk, diced
  • 2 tablespoons olive oil, separated
  • 3/4 cup beef broth, separated

Instructions

  1. Preheat oven to 225 degrees F.

  2. Rub pork with one teaspoon of the garlic. Combine the rosemary and thyme in a small bowl and crumble together with your fingers. Sprinkle herb mixture onto all sides of the pork. Season with salt and fresh ground black pepper. Pat meat to gently rub everything in.

  3. Heat oil in a 9"-10" cast iron (or oven-proof) skillet over medium-high heat. Brown roast on all sides then remove to a plate and set aside.

  4. Add onions, carrot, and celery to skillet and saute, stirring occasionally, until vegetables begin to brown. Add remaining garlic and cook a minute longer. Deglaze skillet with beef broth.

  5. Place roast on top of vegetable/broth mixture and place skillet in center of oven. Cook until an instant read thermometer's internal temperature reaches 145 F (about 2 hours).

  6. Remove roast from oven and tent with foil. Allow to rest for 10 minutes before slicing and serving with pan juices.

Looks like this is another delicious pork roast recipe, this Sunday Night Pork Roast. I am consciously looking for pork roast recipes as my family members are requesting for a change in menu. Yes I understand. LOL. The food becomes boring when cooked many times in one week.

A meal in one dish always appeals to me and this one is an absolute winner. Such wonderful flavours, beautifully tender meat full of the flavours of the veg and herbs the rosemary which adds such a surprise to the flavor and fits the dish perfectly. We had it with steamed fresh green vegetables and it was truly a very pleasant meal. Bon apptit!
