Instant Pot Mushroom Barley Soup
"Last week at Aldi they had a great deal on mushrooms. When I see a great deal on produce, I tend to stock up. Buying two pounds of mushrooms without a plan for them isn’t always a good idea. After a day or two in the refrigerator I knew we better cook them up fast or else they’d go to waste. I found a recipe for Instant Pot Barley and Mushroom Soup and with a few simple modifications it was ready in 30 minutes. That Instant Pot is definitely the best!"

I love my Instant Pot and am always looking for new recipes to try out. I tend to cook alot with grains and legumes, but dont have a lot of recipes with barley, so I'm eager to try this one! I wonder if there's a way to substitute vegetable broth and eliminate the beef to make it a meatless meal? Either way it sounds delicious and would make a yummy lunch or dinner served with bread and a salad!

Soup is such a comforting meal and especially since winter is just around the corner here in South Africa. And, to me, soup with barley really confirms that it is winter and that we all need to be warmed up from the inside, lol! There are no particularly fancy ingredients in this recipe, it is simply a very good warming beef flavored barley soup that the whole family will love on a chilly evening.
