Blueberry Corn Bread
This great blueberry corn bread recipe is so delicious you'll be asking yourself why you didn't try it sooner. The sweet and sour of the blueberries goes perfectly with the sweet corn. This fresh corn bread recipe is definitely a keeper!
Ingredients
- 1 cup flour, sifted
- 1 cup blueberries, fresh or frozen
- 3/4 cup cornmeal
- 1 egg
- 3 tablespoons sugar
- 2/3 cup milk, lowfat
- 1 teaspoon baking powder
- 1/3 cup salad oil
- 3/4 teaspoon salt
Instructions
- Grease or spray 8 x 8 inch baking pan.
- Preheat oven to 425 degrees F.
- In bowl mix flour, cornmeal, sugar, baking powder and salt. Stir in blueberries.
- In small bowl beat egg; add milk and oil, mix.
- Pour all at once into flour mixture. Stir just until dry ingredients are evenly moistened.
- Pour batter into baking pan.
- Bake 25 minutes or until golden.
