Ingredients
- 5 cups cooked white rice
- 8 eachs multi colored baby sweet peppers - chopped
- 2 (10-ounce) fire roasted tomatoes - drained
- 4 eachs grilled corn cut off cob
- 1/2 cup cilantro - chopped
- 3 eachs limes (juiced)
- 1/4 cup honey
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions

Place rice, chopped sweet peppers, fire roasted tomatoes, corn and cilantro into large bowl.

In a mason jar, add lime juice, honey, salt and pepper. Shake until full mixed.

Pour dressing over rice salad and toss.
