I must admit that I had never spiralised a sweet potato before but it worked beautifully. We had this Sweet Potato Noodle Salad with Avocado Pesto as a light lunch over the weekend and it was absolutely scrumptious so this recipe is definitely a keeper! And spiralising the sweet potato has given me all sorts of other ideas too, lol!
