We have a Panini maker and I've been looking for some good recipes to use with it. You really can't get simpler than this recipe since it's just a tasty combination of meat and cheese. I like the garnish of cilantro, but I really feel it needs some salsa on the side. Or perhaps a bit of sour cream to help cut the heat of the spices a bit. This is definitely going on our to make list.
