Grilled Eggplant Sandwich
You may find lots of eggplant recipes around, but none as tasty as this one. The secret is in the pesto mayonnaise...it makes this eggplant sandwich taste out of this world!

This recipe can easily be doubled, tripled, or more to make mulitple sandwiches.

Ingredients
- 2 slices peeled eggplant, 1/4 inch thick
- 1 Portuguese roll (not sweet bread), sliced in half
- lettuce
- 1 tomato slice
- 1 slice Muenster cheese
- 1 pimiento (the kind in the jar)
- 1 bunch fresh basil, chopped
- 1/4 cup mayonnaise
- pepper, to taste
- 1 tablespoon grated Parmesan cheese
Instructions
- Grill the eggplant slowly until evenly browned and soft inside, about 5-7 minutes per side. Cool.
- Mix the basil, mayonnaise, pepper and Parmesan together to make pesto mayonnaise.
- Spread 1 tablespoon of pesto mayonnaise on each slice of bread.
- Assemble sandwich on bread with eggplant on bottom, then cheese, pimiento, lettuce, and tomato.
