"This is the original Monte Cristo sandwich with a couple of tasty little twists! Do you remember this sandwich? I have added bacon and Pepper Jack cheese along with a tasty spicy sauce! What I have created is the perfect Monte Cristo….new, tasty and delectable. Sometimes you have to put a new coat of paint on an old barn to make it shine again! Enjoy my friends! I sure hope you enjoy my new and improved version of the original Monte Cristo!"

I really like this variation of the Monte Cristo. The special sauce is interesting and I'll definitely try it on some other types of sandwiches. I enjoy flavored mayonnaise like chipotle or wasabi and this is something I know I'd like. Cutting the sandwiches into quarters before cooking is a nice idea, and I can see why it's easier to do that than cooking them whole and quartering later.
