Microwave Caprese Panini
Grilling doesn't always have to involve an outdoor burner, and in this case it may even incorporate a microwave. This panini recipe can easily be converted to be made on a panini press, on a grill pan, or an outdoor grill. This caprese panini recipe uses the Lekue Microwave Grill to make a tasty sandwich that can be enjoyed for lunch or dinner.

Ingredients
- 2 slices White Bread
- 3 slices Fresh mozzarella
- 3 slices Fresh Tomato
- 3 Basil Leaves
- 1 tablespoon Olive Oil
- 1 teaspoon Balsamic Vinegar
- 4 slices Cooked and Crispy Bacon
Instructions

Preheat the empty Lekue Microwave Grill in the microwave for three minutes.

Carefully lift the top grill plate and place one piece of white bread.

Drizzle the olive oil and balsamic vinegar. Then layer the bacon, tomato, fresh basil, and mozzarella. Put the top plate on top and fasten together with the straps.

Cook in the microwave for 4 minutes or until the bread is crispy.
