Open Face Eggplant Feta Cheese Sandwiches
If you like feta, you'll love this terrific eggplant sandwich! This eggplant recipe puts to good use the salty goodness of the feta and balances it nicely with the mild flavor of the eggplant. This sandwich is finger licking good.
Ingredients
- 1 small eggplant (about 1 pound)
- salt
- 4 ounces feta cheese
- 1/4 cup heavy cream or milk
- white pepper
- 2 tablespoons fresh basil, julienned
- french bread
- 3 tablespoons olive oil
Instructions
- Slice eggplant lengthwise into 4 slices, about 1/2 inch thick.
- Salt both sides and let sit for 30 minutes.
- Wipe dry with paper towel.
- Meanwhile, beat feta cheese and cream; then mix in pepper and basil.
- Fry eggplant in olive oil until brown and soft on both sides.
- Slice bread into sandwich-size chunks and then lengthwise.
- Spread with cheese mixture.
- Place eggplant on sandwich. Serve hot or room temperature.

I love eggplant and feta but have never thought to combine the two! This sounds like a great pairing and feta will add a nice saltiness to the eggplant. Any suggestions on other vegetables or flavors to add to this sandwich? Perhaps, fresh tomatoes and/or pesto?
