This salad dressing would be amazing mixed into a Mediterranean style summery pasta salad! Perfect for the warm weather since it is not mayonnaise based. I am sure that it is much easier on the waistline than the store bought shelf stable dressing since it is not full of hydrogenated oils or high - fructose corn syrup!

I love making my own salad dressings. I love the freshness of them. I would just use some of my own Mediterranean spices to this recipe as we don't have the Greek Freak range here but you can always improvise.I like this dressing idea as it does not seem bland.

Ok so we made several changes. Firstly Greek Freak is not available in South Africa so we Googled it tried to improvise. Then we used a fresh crushed garlic clove and substituted some lemon juice for the vinegar (which I can not bear). We have no idea whether or not it tasted anything like the recipe is supposed to but it was extraordinarily good and we are definitely going to have it again. Lol!
