Cheesy Fried Cornmeal Fritters Recipe
"Cornmeal fritters are also known as hushpuppies. There are a few stories about where this name came from. One is that people would give dogs fried cornmeal as a treat when they begged. Another, probably truer tale, is that hushpuppies were created by a well-known Black fish cook in the Carolinas about 120 years ago. He would serve these fritters along with fried fish. If you’ve had hushpuppies in the United States, you likely had them with fish. Even some fast-food fish chains serve hushpuppies with their fish. But no matter their origins, they are tasty. "

Ingredients
- 1 cup yellow cornmeal
- 1/4 cup all-purpose flour
- 1/2 tbsp baking powder
- 1 large egg, beaten
- 3/4 cup buttermilk
- 8 oz brie
- 1 oz chives
- Salt and pepper, to taste
- Vegetable oil, for deep frying
Instructions

Chop the room temperature cheese into small cubes.

Finely dice the herbs.

In a large bowl, whisk together cornmeal, all-purpose flour, baking powder, salt, and pepper.

Add in beaten egg and buttermilk.

Combine until it forms a rough dough.

Scoop out a tablespoon of dough and form into a ball.

Flatten the ball and place a cube of cheese and a pinch of herbs at the center.

Fold the dough and roll it to form again the shape of a ball.

Fry the dough in batches at 375 degrees Fahrenheit for 3 minutes, or until golden brown.
