Chorizo And Eggs
"Chorizo and eggs is a Mexican breakfast classic. The traditional recipe is prepared with Mexican chorizo, which is raw spiced meat that needs to be taken out of the sausage casing to be cooked. I prepare this dish with Mexican and Spanish chorizo and both versions taste amazing. Spanish chorizo has its own advantages as it is cured. It's hard and of course spices but you just need to cut it into slices and add the sausage to the pan with the eggs at the end.
