Creamed Beets
If you love beets, you'll be happy to know that not only are they tasty, but they are a a good source of vitamin C, iron and magnesium, and a very good source of dietary fiber, folate, potassium and manganese. Enjoy them in this wonderful recipe - guilt-free!

Ingredients
- 25 grams butter
- 1 onion, finely chopped
- 2 tablespoons flour
- 300 milliliters milk
- 2 tablespoons cream
- 1 teaspoon mixed herbs
- salt and fresh ground pepper, to taste
- 500 grams cooked beets, skinned and diced
- 1 tart dessert apple, peeled, cored and diced
Instructions
- Melt butter in a pan, add the onion and fry gently for 5 minutes without browning.
- Add the flour and cook 2 more minutes, stirring constantly.
- Remove from the heat and gradually add the milk, beating vigorously after each addition.
- Return to the heat and bring to the boil stirring constantly.
- Lower the heat and simmer 2 minutes stirring occasionally, then stir in the cream, herbs, and salt and pepper to taste.
- Fold in beets and apple and simmer 5 more minutes, stirring occasionally.
- Remove from heat and leave to cool, stirring occasionally to prevent skin forming.

What are mixed herbs? Please be specific. Also, please also use non metric measurements such as teaspoon, tablespoon, cup, etc. for the metric- challenged cooks.

Love beets! Recipe sounds great but what about a version for non-metric system users. At least I assume you were giving amounts in metric measurements. Send it out again, please. Linda R.
