Incredible Spiralized Potatoes
If you're a hash brown fan, then you're going to be head over heels in love with this potato recipe. Add these Incredible Spiralized Potatoes to you eggs and bacon when you sit down to eat your next breakfast. Because of their unique and fun shape, these potatoes are twice as fun to eat! Season this appetizing side dish some salt, pepper and a sprinkle of dried chives for extra flavor. These poppin' potatoes are everything you need and more to accompany your sunny side up eggs on a Sunday morning.

Ingredients
- 12 ounces Yukon gold potatoes, peeled and rinsed
- 1 teaspoon cornstarch
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- Cooking spray
- Fresh or dried chives to sprinkle on top
Instructions:

Run the potatoes through the fine shredder blade of a spiralizer.

On a baking sheet lined with paper towels place the potato strands. Blot to remove excess liquid from the potatoes.

Sprinkle the top of the potato strands with the cornstarch, salt and pepper.

In a large skillet heat the olive oil over medium high heat. Place the potato strands into the skillet and using a spatula flatten slightly.

Cook for 5 minutes. Coat the top with cooking spray then carefully flip the potato cake over. Cook until crispy and browned about 4-5 minutes more.

Top with chives, optional.

Breakfast is for sure my favorite meal of the day and my favorite side to have has got to be, corned beef hash to go along with my poached eggs. I just love how the yolk oozes into the hash to make it more rich and flavorful than it already is...and if that's not reason enough, the aroma of the carmelized corned beef hash has me going back for more every time.

Since breakfast is usually cereal, my favorite side would be fresh fruit. With eggs, I love onions mixed with shredded sweet potatoes, cooked tender and browned like hash.

We really love Eggs Benedict at our house, and I make this treat from time to time. I serve it with hash browns and a fresh fruit salad on the side.
