    Roasted Pear And Cranberry Relish

    Roasted Pear and Cranberry Relish is a different and delicious spin on an expected cranberry relish recipe. It's a great Thanksgiving dinner recipe, but this cranberry relish recipe could be used any time.

    Ingredients

    • 2 cans (15 ounces each) pear halves in juice, drained and cut in 1/2-inch chunks
    • 2 teaspoons olive oil
    • 1/2 teaspoon dried rosemary, finely crushed
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper, ground
    • 1/2 cup pecan pieces
    • 1 can (16 ounces) whole-berry cranberry sauce

    Instructions

    1. Preheat oven to 400 degrees F.
       
    2. Blot pear chunks with paper towels to absorb all surface moisture.
       
    3. Toss with olive oil, rosemary, salt and pepper on a large rimmed sheet pan and spread into an even layer.
       
    4. Roast for 10 minutes.
       
    5. Toss, scatter pecans on top and roast 5 more minutes.
       
    6. Transfer to a bowl, cool for 10 minutes and fold in cranberry sauce.
