Pineapple Fried Rice
"I normally don’t like Pineapple Fried Rice as I feel like it’s just way too sweet. (And I have issues with sweet and savory in the same dish…) But this version totally works. It’s mostly savory with just a little bit of sweetness from the diced pineapple. And this Pineapple Fried Rice comes together in no time at all. I highly recommend prepping all of your ingredients first. (This can be done while the rice cooks and then cools.) Once you start cooking this one, it’ll be done before you know it…so be ready. And then be ready to eat because this Pineapple Fried Rice is amazing. It’s seriously way better than takeout! Enjoy, my friends!"

I just hosted a luau themed meal at my job's cafeteria yesterday and I wish I had seen this recipe weeks ago because it just screams Hawaiian luau! The fried rice is easy to make, has great flavors, and using the pineapple as the serving dish is brilliant. The colors are so vibrant. I also recommend adding some fresh mango chunks in to add even more fruity flavors!
