Famous 15 Minute Italian Soup is our version of the delicious Zuppa Toscana soup you may be familiar with if you've ever ordered it off the Olive Garden menu. This copycat version is just as tasty and you can make it at home anytime you want! With crispy bacon, spicy Italian sausage, onions, potatoes, chicken broth, spinach, and a few others ingredients, this soup packs a hearty punch. It's also one of the yummiest soups we've ever made in our test kitchen. If you love having great soup recipes at your disposal all year long, this is one you'll want to add to your menu.

Ingredients

  • 6 slices bacon, diced
  • 1 pound bulk spicy Italian sausage
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 4 cups chicken broth
  • 4 yukon gold potatoes, thinly sliced
  • 3 cups baby spinach
  • 1 1/2 cup heavy cream
  • Kosher salt and freshly ground black pepper, to taste

Instructions

  1. Heat a large pot over medium-high heat. Add bacon and cook until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate; set aside.

  2. Add Italian sausage to the pot and cook until browned, about 3-5 minutes, making sure to crumble the sausage as it cooks.  Add garlic and onion, and cook, stirring frequently, until onions have become translucent, about 2-3 minutes. 

  3. Stir in chicken broth and add potatoes. Bring to a boil and cook until tender, about 10 minutes.

  4. Stir in heavy cream and spinach. Season with salt and pepper.

  5. Serve immediately. Sprinkle each bowl with reserved bacon crumbles.

A soup in 15 minutes! Bring it on. This soup looks fantastic. It is making my mouth water, especially with the spinach in it. I can't wait to try this. I would eat it with a nice crispy french baguette...yummm. This is definitely a keeper for after those long days at work.

The weather is turning cool, fall is rapidly approaching, and this Famous 15 Minute Italian Soup has found it's way to my dinner table, and the top of my "go to" recipes list. Soup is obviously the ultimate "one pot wonder" recipe and this soup adds to it simplicity and ease. It's rich and hardy and makes a great week night meal.

Our family just LOVES this type of hearty, warming winter meal and this one is REALLY GOOD! Soup is so perfect for winter and we all really enjoyed this one for dinner tonight. Some fabulously crunchy, fresh Italian bread from our local baker, Marco, made this a really enjoyable meal and one which we will definitely be having again.

I've never had the pleasure of trying this Olive Garden Italian soup before...but the ingredients in it make me wonder how I managed to never notice it on the menu. Hearty soups like these are my favorite and with the combination of some spicy sausage and the spinach alone, I'm definitely sold! Do you think the leftovers...assuming there are any, can be stored in the freezer for another time?

This soup is so rich and meaty that even the pickiest of hubbies would definitely approve! I actually think that this quick and simple version is even better than the one served at Olive Garden. The stuff I've had there before was very thick and starchy, and loaded with salt. This version is made with fresh ingredients so you know exactly what is going in to it!

This soup looks really good! I've never tries zuppa toscana, but this looks delicious and I love the addition of potatoes in this soup! It looks really hearty too, and I'm sure that served with a slice of crusty bread and a nice salad, it would make a perfect lunch or weeknight meal. I wonder if I could use coy or coconut cream instead of regular cream to make it dairy-free?
