Yum! The Roman cheese is optional, but I would not go without it. Doesn't cheese make it better. Unless you can't have dairy. I prefer Yukon Gold potatoes to Russets. It still comes out good. But, Russets are a very starchy potato so the texture of the finished soup may be a little different, depending on what type of potato you use.
