Once you've had a few bowls of this magical healing soup, you'll be on the road to recovery in no time. And, you don't have to be sick to enjoy this soup! This is a delicious homemade soup that is great to make in bulk during the cold winter months and eat throughout the week for lunch or dinner.

Ingredients
- 2 tablespoons olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup chopped baby carrots
- 2 stalks celery, chopped
- 1 zucchini squash, diced
- 2 cups green beans (fresh or frozen)
- 1 (14-1/2-ounce) can kidney beans, drained and rinsed
- 3 cups cabbage, shredded
- 2 (14-1/2-ounce) cans chicken broth
- 3 cups tomato juice (V8, homemade, or other store bought)
- 2 teaspoons Herbes de Provence
- salt and pepper, to taste

Instructions

In a large pot, heat olive oil and saute onion, garlic, carrot, and celery until soft. Add green beans, zucchini and kidney beans. Stir in broth and tomato juice. Bring to a boil and reduce heat to simmer for 15 minutes.

Stir in shredded cabbage and Herbs de Provence and allow to wilt for 10-15 minutes. Add salt and pepper to taste. Serve hot.

The name pretty much says it all...as with all soups, I think there's something both medicinal and soothing about eating them when you or those you love are feeling under the weather. I'm not really sure what Herbs de Provence is but I think basil and a few bay leaves would do just as well and some tomatoes would be great in this soup too!

Oh my word, is this not the perfect sounding winter warming soup recipe? Such a fabulous sounding list of ingredients that I simply could not ignore making it right away! The only addition I made was a little chopped fresh chili for a little extra bite to the taste. We had it with crunchy Italian bread and it was absolutely delicious, everyone in the family loved it. Definitely one for the favorite recipes file!

There's something with hot soup that makes you feel well and refreshed. This Get Well Soup contains carrots that are rich in vitamin A, beans that are rich in the B vitamins, and cabbage and tomato that ate packed with vitamin C. It is called get well soup because it will make you recover fast from sickness.

This sounds really good. I don't keep chicken broth on hand though. I really enjoy a nice vegetable soup though. Has anybody ever tried this with vegetable broth instead of the chicken broth? I'm making a very big batch of vegetable broth and I am trying to find some recipes where I can use it. Would this take away from the flavor at all?

I simply cannot get enough of this soup! The first time I made it exactly as the recipe instructed. Now I like to keep a batch in single serve containers in the refrigerator (it also freezes very well!). I have played a bit with the ingredients, and especially enjoyed a version where I used jalepeno olive oil for an extra kick! This is a great, healthy satisfying soup.
