I usually do a slow cooked corned beef with potatoes and cabbage like my Irish grandma would make in a dutch oven, but I think I'll try this fresh new take on these savory flavors next time. Since corned beef usually comes in a 3 to 4 pound slab, I can do this soup one day, and roast the rest for Reuben sandwiches another! Very economical, since you buy once and eat delicious home cooked flavors twice! It would be great with a quick and easy Irish soda bread!

I love a hearty soup, especially in winter and this soup look especially delicious! This would be a great soup to serve at a St Patricks Day dinner or potluck! I wonder if you can substitute another type of meat for the corned beef or make it vegetarian altogether? Maybe add extra cabbage and use vegetable stock? Either way it sounds yummy, and would be great for SuperBowl Sunday too!
