Avocado Soup
Ingredients
- 4 medium avocados
- 1 cup plain low-fat yogurt
- 4 cups chicken stock or broth, cold, fat removed
- Juice of 1 lime
- 1 teaspoon finely chopped fresh mint
- Red pepper sauce, to taste Salt, white pepper, to taste Avocado slices,
- fried tortilla strips for garnish
Instructions
Yield: 6 servings. Cut the avocados in half and remove the pits. Roughly chop the flesh. Transfer to the bowl of a food processor. Add the remaining ingredients, except avocado slices and fried tortilla strips. Process until smooth. Adjust the seasoning. Serve garnished with avocado slices and tortilla strips.
