Ajoblanco White Gazpacho

This almond-based soup flavored with garlic is served cold with fruit. Try on a hot summer afternoon.

Ingredients

  • 5 slieces dry French or Italian style bread
  • enough water to cover and soak bread
  • 5 garlic cloves
  • 250 grams ground almonds
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 200 milliliters olive oil
  • 7 tablespoons vinegar
  • additional water

Instructions

In blender or food processor make a smooth puree with all the ingredients. Add water little by little until the desired consistency is reached. Taste for salt, sugar and vinegar. Chill thoroughly and serve with halved grapes or whole raisins floating on top. (Note: It may be necessary to add more cold water after chilling.)
