Goulash Soup
Ingredients
- 2 c. chopped onion
- 1/4 c. shortening
- 3 bell peppers (green or red), chopped
- 3 T. tomato paste
- 1 lb. lean beef, cut in 1 in. cubes
- Dash of red pepper
- 1 t. paprika
- 2 cloves garlic, minced
- 1/2 t. salt
- 6 c. beef broth
- 1 T. lemon juice
- 1/4 t. caraway seeds, optional
- 1 c. cubed potato
Instructions
Fry onions in shortening until transparent. Add peppers and tomato paste. Cover and simmer 10 min. Add remaining ingredients (except potatoes). Simmer 1 1/2 hrs until meat is tender. Add potatoes if desired and simmer until potatoes are done. Serves 6. (Tastes better the next day).
