Even though the days are generally still summer hot here in South Africa we did experience quite a chilly day today so I decided we needed something hearty for dinner to counteract the sudden temperature change. This Italian Vegetable Soup recipe is really tasty, filling, comforting for cooler weather. A delicious combination of veg, beans, herbs and pasta and I have saved the recipe under Yummy Warming Meals because my family will definitely be wanting it again in winter!

What are Borlotti beans? Does anyone know? And does it matter what kind of bouillon? Vegetable, chicken or beef? All the veggies are nutritional powerhouses. It will be great late spring when all of that is coming up fresh in the garden. Sometimes I like not eating meat and you wouldn't miss the protein with the beans.

This soup looks really delicious and reminds me of a minestrone. It's interesting because I've never thought of adding in zucchini and broccoli! This soup is a great way to add alot of veggies into a meal. This would be great for lunch or as a hearty dinner with a salad and crusty bread or panini. I wonder if anyone has tried to make this in a slow cooker
