Ingredients

  • 6 tablespoons butter
  • 1 cup finely chopped celery heart
  • 1 cup finely chopped onion
  • 1 clove garlic, minced
  • 1 teaspoon poultry seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon fresh ground pepper
  • 5 eggs
  • 4 cups classic herbed stuffing mix
  • 4 cups country style cubed stuffing
  • 4 cups vegetable broth

Instructions

  1. Preheat oven to 350 degrees F. Lightly spray a 9 x 13-inch casserole dish with cooking spray.

  2. In a large skillet, melt the butter over medium high heat and saute the celery, onion, and garlic.  Add spices and cook until the vegetables are soft, about 8 minutes.

  3. In a large bowl, beat the eggs, then add the sauted vegetables and stir in the stuffing mix and broth until completely moistened. Pour mixture into the prepared casserole and bake for 1 hour until puffy and golden brown, but the center is completely cooked.
