My work serves a quinoa bowl similar to this and it is so good! Ours has cooked spinach leaves and tomato with guacamole, cheese, and salsa on top as more of a Mexican style dish!

I'm trying to get to grips with cooking quinoa and am always looking for recipe ideas. I absolutely love mushrooms. I like the idea of using chicken broth as I am sure this will give the quinoa lots of flavor. I think I will try the baked Parmesan garlic mushrooms too!
