Ingredients

4 potatoes, medium size
2 cups freshly grated Parmigiano Reggiano
2 eggs
1 cup milk
salt and pepper, to taste
6 tablespoons butter

Instructions

Preheat oven to 400F degrees.
Boil the potatoes until tender.
Drain, peel while still hot, and mash in a large bowl.
Add the cheese, eggs, milk, salt and pepper, mixing thoroughly.
Transfer to a baking dish smeared with butter and bake in an oven preheated to 400F degeres for about 30 minutes.
